Colorado is in the top ten nationally for onion production. State growers harvest more than 3,500 acres of onions each year, producing 166 million pounds. Choose onions that are firm and dry with bright, smooth outer skins. Store whole onions in a cool, dark, well ventilated place. Onions are high in Vitamin C and a good source of fiber. Look for Colorado onions at your local grocery store or at restaurants across the state. Each month the Colorado Department of Agriculture features a different commodity to highlight the variety and quality of products grown in the state.
