Avalon International Breads (AIB) has proudly produced fresh, artisan breads and rustic pastries through old-world practices, using organic grains and flours. AIB is currently housed in a 2,000 square foot retail/production space at 422 W. Willis, in Detroit’s Cass Corridor. AIB is an “S” corporation, owned by Ann Perrault, Jackie Victor, Chet Czaplicka, Jon Carlson and Greg Lobdell. AIB employs 45 people as trained bakers, wholesale drivers/packers, retail sales and managers.
AIB has five core areas that comprise the business: bread production, sweets production, lunchtime carryout, coffee bar, and retail market place. Avalon’s sales are approximately 50% wholesale (35 restaurants and markets) and 50% retail (comprising of approx 500 customers daily). Avalon’s wholesale customers include upscale markets in the surrounding area such as Plum Market (Bloomfield Hills, W. Bloomfield, Ann Arbor). Holiday Market (Royal Oak), Arbor Farms, People’s Food Co-op (Ann Arbor), as well as high quality restaurants and coffee shops, including: Sweetwater Café (Ann Arbor), Grizzly Peak and 4 other restaurants of the Mission Group (Ann Arbor, Royal Oak), Small Plates (Detroit). Avalon’s retail customers are extremely diverse, ranging from Detroit residents. DMC/WSU Cultural center employees and customers, commuters to downtown Detroit and destination “foodies” pursuing the best in fresh baked goods made with 100% organic flour and an environment that is inviting and exciting
